Chocolate Crinkles
4 eggs
1 ¾ cups granulated sugar
4 oz. unsweetened chocolate, melted and cooled slightly
½ cup cooking oil
2 tsp. baking powder
2 tsp. vanilla
2 cups all-purpose flour
2/3 cup powdered sugar
In a large bowl, combine eggs, sugar, melted chocolate, oil, baking powder, and vanilla. Beat with an electric mixer on medium speed until combined. Gradually beat in flour. Cover and chill dough for 2 -24 hours or until dough is easy to handle.
Preheat oven to 375 degrees. Lightly grease a large cookie sheet; set aside. Place powdered sugar in a small bowl. Shape dough into 1 inch balls. Roll balls in powdered sugar. Place balls 1 inch apart on prepared cookie sheet.
Bake cookies in a preheat oven for about 10 minutes or until edges are set and tops are dry but not overbaked. Transfer cookies to a cooling rack. (Cookies will deflate slightly upon cooling.) Yields: 36 cookies (or more).
